I apologize for late reply to your question. I congratulate you to have a nice 19th century farmhouse. Regarding your house surface and how can you make it straight I have no clue. If you want to use pad under your rug that is good idea, but I am not sure is it necessary for ALL the rug either. Rug pads have two distinct functions:
1. For low pile rug make your rug files smoother when you walk
2. Keep the rug more resistance to move under your feet.
